Ingredients 1 cup red lentils (wash till water runs clear & drain)2 tbsp oil1 tsp cumin seeds1 tsp fennel seeds1 bay leaf1 cup onion (finely diced)2 cloves garlic (minced)1 inch ginger (minced)1 tsp cumin powder1 tsp coriander powder1/4 tsp chilli powder1/2 tsp turmeric powder1 cup tomato (diced)4 cups water2 cups potatoes (cut into 2 inch cubes)2 cups carrots (cut into 2 inch cubes)2 cups eggplant (cut into 2 inch cubes)2 cups french or long beans (cut into 2 inch pieces)1/2 cup fresh red or green chillies (sliced)3 plums (cored & quartered)1 tbsp tamarind paste (to taste)1 tsp salt (to taste) Steps Heat oil in a large pot on medium high.Add cumin, fennel seeds plus bay leaf, once they start splattering, add onion, garlic & ginger.When onion is translucent, add cumin, coriander, chilli & turmeric powder.Cook for 1 min, add tomato & cook till they break down (abt 5 mins)Add lentils, water & potatoes, bring to a boil.Let it simmer for 15 mins, add carrots & eggplants.Cook for 10 mins, add beans, chillies, plums, tamarind & salt, stir well.Continue cooking till potatoes are cooked through & lentils reach desired consistency.Taste to adjust seasoning, garnish with fresh herbs (optional), enjoy as is or with carbs of choice.
