Deep fry chopped shallots until golden brown, strain set aside2. Slit a tofu on one side to make a pocket, then turn the tofu inside out. Do the remaining3. Take the excess tofu crumbles and put in a bowl4. Combine chicken, flours, garlic, scallions, fried shallots, egg, tofu crumbles, water and all seasoning ingredients mix until well combine5. Take one tofu, and stuff it with the chicken mixture about 1-2 tbsp. Do the remaining6. Heat 2-3 inch of oil in a deep large pan until hot7. over medium heat, fry tofu in a few batches, 5-7 pieces at a time, don’t over crowd the pan. And fry 2-3 min on each side until golden brown8.
