Download ImageShiitake Mushrooms & Broccoli Stir Fry Ingredients1 large broccoli (or 4 cups)2 cups shiitake mushrooms (fresh or dried)1 tsp salt1 tbsp oil2 tsp garlic (minced)2 tsp ginger (minced)2 tbsp oyster sauce (or hoi sin sauce to make it vegan)1/3 cup water1/2 tsp ground white pepper1 tbsp cornstarch (mix with 1/3 cup water to make a slurry)2 tbsp rice vinegar1 tsp sesame oilStepsWash broccoli & cut into bite sized florets of equal size to ensure even cooking.Bring a pot of water to a boil over high heat, add salt & broccoli florets.Blanch for 2-3 mins until they turn bright green in colour, feels tender but still crisp.Remove blanched broccoli with a slotted spoon & arrange onto a serving plate.Wash fresh shiitake mushrooms or rehydrated dried ones in hot boiling water & cut into halves.Heat a wok or large pan on medium high & add oil.When hot, add garlic & ginger, sauté for 1 min, add mushrooms & fry for 2 mins.Add oyster sauce, water, pepper, vinegar, cornstarch slurry & sesame oil, mix well.Taste to adjust seasoning & cook until mushroom reaches desired doneness & sauce reaches desired consistency.Pour mushroom & sauce over broccoli, serve as is or with rice & other dishes.
