Download ImageIngredients250 g dried pasta of choice2 tbsp butter1 tbsp vegetable oil4 cloves garlic (minced)10-15 curry leaves1 fresh red chilli or bird’s eye chilli (thinly sliced)3 salted egg yolks1/2 cup cooking cream1/2 cup reserved pasta water1 tsp chilli flakes (optional)StepsPlace salted egg yolks in a steaming dish & steam for 10 mins, mash with a fork & set aside.Bring a large pot of water to a boil, salt & cook pasta according to instructions on the packaging till al dente.About 5 mins before the end of cooking time for the pasta, preheat a large saute pan on medium high, add butter & oil.Add garlic, fry for 1 min, add curry leaves & sliced chillies, cook for 2 mins.Add mashed salted egg yolks & stir fry until frothy.Add cream, reserved pasta water & chilli flakes (if using)Add cooked pasta into to the sauce, toss well to make sure the sauce coats the pasta evenly, taste to adjust seasonings & remove from heat.Serve immediately.
