Add eggs, carrot, green onion, spam, chili and seasoning sauce in a bowl, whisk until well combine and sugar dissolves2. Heat a medium pan, spray oil. Over low heat pour in 1/4 portion of the egg mixture, tilt the pan to cover all the bottom of the pan3. let it set, start rolling it into a log shaped from one side to the other4. Spray oil again on the pan, Pour another 1/4 portion of egg mixture and cover the bottom of the pan5. When it set, start rolling again. Remove from heat and let it rest. use the remaining to make another log.6. Add warm rice, corn syrup, salt and rice vinegar into a bowl. Mix well7. Place bamboo mat in a working surface, top with a sheet of seaweed. Shiny side down8. spread 1 1/4 cup of cooked rice on top evenly,9. Place the rolled egg in the centre10. roll the mat, along with seaweed and rice over the egg in one motion into a bigger log. Grab the mat press it tightly as you continue rolling the gimbap.
