Download ImageSalmon & Caviar Blinis IngredientsPancakes150g AP flour13 g caster sugar10 g baking powder1 g salt180 ml milk1 egg50 gram unsalted butter (melted)Toppings250 g smoked salmon (cut into strips or torn into smaller pieces)200 g sour cream or creme fraichefresh herbs of choice (chives, spring onion, dill, parsley, etc)salmon roe or caviarStepsSift flour, sugar, baking powder & salt into a large bowl.Gradually whisk in milk, egg & melted butter.Refrigerate mixture for 30 mins.Heat a non stick pan over medium high heat.Drop 1/2 a tbsp of blini mixture into pan to make mini “pancakes”.Cook for 30 secs or until lightly browned underneath & bubbles appear on the surface.Flip, cook for another 30 secs or until blinis are cooked.Repeat with remaining blini mixture.Top slightly cooled blinis with smoked salmon, sour cream, caviar & chopped fresh herbs.
