In a large pot heat some Oil on medium and add your grated courgette, cover the pot let it cook until reduced in size and the water has released.2. Add your washed spinach and again let it reduce in size until the water has released and cooked off a little.3. Add in your ricotta, Boursin cheese, 150g cheddar cheese and all the spices listed above. Mix until we’ll incorporated and cover to cook for 5 minutes.4. In the meantime fill up your kettle to boil and place in a large pot big enough for the lasagna sheets to fit in. Place 6 sheets in the hot water for 2-3 minutes to slightly soften.5. In a large baking tray add a few spoons of pasta sauce and spread it out placing your lasagna sheets to fit the tray. Add a few heaps of the ricotta filling spreading it out evenly adding some pasta sauce on top…. Repeat this process 2-3 more time.6. On the final layer add any remaining ricotta filling on top sprinkling your remaining 250g cheddar cheese all over.7. Bake in the oven at 200C for 45 minutes covering the tray with foil.
