Download ImageProper Chicken Curry Ingredients2 chicken breasts washed and diced2 bay leaves3 cloves2 cinnamon sticks1 black cardamom (or 2 green cardomoms)2 tbsp oil2 large onions finely diced2 tomatoes diced (skinned if you prefer)1 tsp garam masala powder1 tsp cumin powder1 tsp coriander powder3/4 tsp turmeric powder3/4 tsp red chilli powder5-6 garlic cloves minced3 green chillies minced1 heaped tsp ginger mincedsalt to tasteMethod1 In a heated pan, add the bay leaves, cloves, cinnamon, cardamom and toast for 2 minutes on a low heat2 Add the oil to the pan, allow the spices to infuse for 30 seconds3 Add the onions and salt Saute over a medium heat until the onions brown until nearly burnt – the browner the better4 Next, add the chopped tomatoes, dry spices and chilli, ginger and garlic – mix together5 Cook for 10 minutes over a medium heat until the tomatoes have mashed and all the ingredients combine together6 Drop in the chicken, mix together and pour in a little water if required7 Simmer for 10 minutes on a medium heat or until the chicken is cooked8 Add half a bag of fresh chopped spinach to make it into aGarnish with freshly chopped coriander and enjoy with naan, rice or chapatis Source : www.instagram.com
