Add 2 tbsp of olive oil to a pan2. Once the oil is hot, add the cumin seeds and onions and sauté3. Once the onions start turning translucent, add the garlic ginger paste4. Add turmeric and chilli powder5. Add 1 more tbsp of olive oil to lightly fry the onions and spices6. Add in the peanut butter7. Add water and salt before mixing well8. Add the eggplant and cover with the spices9. Simmer on low heat for 10-15 minutes, or until the eggplant is soft10. Add sugar and mix this through11. Garnish with fresh green chillies12. Enjoy!
