Download ImageNo-bake Homemade Chewy Granola Bars Ingredients2 cups of rolled oats1/2 cup peanut or any nut butter1/3 cup shredded coconut1/4 cup maple syrup1 tbsp coconut oil, melted2 flax eggs (2 tbsp ground flax seed @canmarfoods 6 tbsp water)1 tsp vanilla1/2 tsp sea salt1/2 – 1 tsp cinnamon *optional2 (heaping) tbsp mini chocolate chips (I use @enjoylifefoods)MethodIn a small bowl, make your flax egg and let set for 5 minutes. In a large mixing bowl, add all of your dry ingredients and mix well.On the stove over low heat or in the microwave, gently melt your nut butter and coconut oil, once melted add to dry ingredients and mix in remaining ingredients.Once well mixed, take a loaf tin or baking dish and line with parchment paper, take the granola mixture and pour into pan.Spread evenly and take a spatula to really press down the mixture. Place in freezer for 45 minutes, remove and cut into bars.I like to individually wrap the bars and keep on hand in the freezer. When ready to eat, remove and let thaw for a few minutes!
