Soak the dates in hot water for 5-10 minutes. Drain the dates, reserve the water for step 2(optional)2. To make the date caramel, blend the soaked dates, vanilla, and pb in a food processor/blender until smooth. Add a little reserved water if the mixture is too thick. Set aside3. Add the oat flour to the food processor with 45g of the caramel and process until well combined. It will have a sticky dough-like form.4. Press the nougat into a narrow container lined with baking paper (i used just a lil more than 1/2 loaf pan as the mold). spread the remaining caramel evenly over the nougat, then press the peanuts into the caramel layer. Keep in freezer for 60-90 minutes5. Take out from the freezer, cut into bar-sized pieces6. Melt the chocolate on a glass/bowl, dip the bars into the chocolate and flip them with 2 forks until well coated7.
