Matar Pulao is a flavorful rice dish from the Indian subcontinent, specifically from the region of North India. It is made with long-grain basmati rice, green peas (matar), and aromatic spices. The dish is typically vegetarian, but it can be prepared with chicken, beef, or lamb for a non-vegetarian version.
To make Matar Pulao, the rice is first washed and soaked for 30 minutes. Then, cumin seeds, bay leaves, and whole spices like cardamom, cinnamon, and cloves are fried in oil or ghee until fragrant. Next, onions are added and fried until they turn golden brown. Green peas are then added along with ginger-garlic paste and sautéed for a few minutes.
The soaked rice is then added to the pot along with water, salt, and a pinch of saffron for a beautiful yellow color and flavor. The mixture is brought to a boil and then the heat is lowered and the pot is covered and allowed to simmer until the rice is fully cooked and fluffy. Finally, the Matar Pulao is garnished with fried onions and fresh coriander leaves before serving.
Matar Pulao is often served as a side dish to complement meat or vegetable curries, or it can be enjoyed on its own as a satisfying and flavorful meal.
