Cut sweet potatoes into uniform 1 inch squares. Melt coconut oil, add onions and sweet potatoes, sauté over medium low heat for 10 minutes being careful that they do not burn, but just carmelize.2. Stir in ginger, curry paste and grated garlic. Stir another minute. Add broth and coconut milk. Simmer until potatoes are fork tender. Add tamari.3. Stir in chickpeas and roast turkey/chicken, stir until warm4. Top with fresh cilantro and sliced green onions. Serve with cooked rice noodles and lime wedges.
