Creamy Garlic Prawns

Ingredients

500g prawns1 tablespoon olive oil2 tablespoon butter2 tablespoons minced garlic1 cup chicken broth (stock)1 cup heavy cream1/3 cup finely grated Parmesan cheesejuice of 1 lemon (adjust to your tastes)SaltBlack pepper

Instructions

Heat 1 tablespoon of oil and 1 tablspoon butter in a large skillet over medium-high heat until butter has melted and pan is hot.Fry the prawns on each side until changing colour and sprinkle with salt and pepper.Once cooked set aside. In the same skillet melt the remaining butter, add the garlic and fry until fragrant (about 1 minute).Reduce heat to low-medium heat, add the broth and cream. Add in the parmesan cheese.Season with salt and pepper to your taste; Bring the sauce to a gentle simmer; Pour in the lemon juice, allow to simmer for a further minute to combine.Add the prawns back into the pan, allow to simmer until the sauce is thickens.Serve with the sauce over pasta, or rice. Top with lemon slices and parsley.
