Ingredients

250g of leafy mix2 medium sized cucumber, chopped8 cherry tomatoes, chopped1 chicken breast, boiled with salt and shredded1/2 cup of dried cranberries1/2 cup of salted cashews1/2 cup of fresh parsley, roughly chopped1 cup of crumbled feta cheese2 tbsp of olive oilsalt, to taste

Method

1. To a bowl, add the leafy greens, chopped cucumber, tomatoes, shredded chicken, dried cranberries, cashews, parsley, crumbled feta cheese, olive oil and salt to taste2. Mix well to combine all ingredients3. Enjoy!
