Watch Video Chicken Veggie Soup Ingredients 2 peices chicken breast on the bone @hosnabutchery3 nests of vermicelli noodles (one cup ) @sanremopasta1 large brown onion diced2 carrots peeled and diced2 cups celery diced1 can corn kernels @edgellau2 white potatoes diced2 cups pumpkin diced2 tbsp Butter to cook onions2 tbsp Olive oil to sear the chicken2 tbsp salt2 tbsp powdered chicken stock @massel_australia1 tbsp vegeta @vegeta_australia Steps Heat oil and Sear your chicken on the outside for 30 seconds in a seperate pan and set asideIn a large pot Heat the butter and cook onions until translucentAdd in the seared chickenImmediately add all remaining veges and corn and salt and chicken stock and vegeta .Add enough water to cover veges and let them cook well until pumpkin is soft .After about 30 mins remove the chicken and set aside for shredding once it’s cool .Cook until the pumpkin is so soft it disintegrates and turns the soup orange .Add your shredded chicken back inBreak up 2 nests of vermicelli noodlesAdd water if need be and taste the salt as you go as you add water .Don’t keep uncovered the whole time as the water will dry up , cover when it’s simmering .Garnish with fresh parsley and enjoy Source : www.instagram.com
