Download ImageSalad Ingredients1 head romaine lettuce (coarsely chopped)1 large avocado (sliced)2 cups cooked chicken breast (diced)1 cup beef pastırma or turkey bacon (cooked & sliced or crumbled)2 cups cherry tomatoes (halved)1/2 cup red onion (sliced)4 hard boiled eggs (cut into quarters)1 cup blue cheese (crumbled)Dressing1/2 cup extra virgin olive oil1/4 cup vinegar of choice1 tbsp mustard1/2 tsp salt (to taste)1/4 tsp ground black pepper (to taste)StepsAdd all the ingredients for the dressing into a jar, put the lid on, shake to combine & set aside.On a large platter, spread out lettuce & arrange the rest of the ingredients on top.Season with some salt & pepper, drizzle with enough dressing (reserve the rest in a bowl on the side) & serve immediately.* for the chicken, I used 3 breasts, drizzled with 1 tbsp olive oil, 1/2 tsp dried thyme, 1/2 tsp chilli flakes, 1/2 tsp salt & 1/4 tsp ground black pepper then bake at 200 deg C for 30-40 mins (flipping over at the halfway mark) Source : www.instagram.com
