Prepare the first batch of sauce, marinate the chicken and prawns separately and leave in the refrigerator overnight.2. Heat the oil in a pan and add the garlic and ginger until flagrant. Add the chicken, onion, mangetout, pepper and chives and let simmer on a low flame for about 30 minutes, stirring occasionally.3. Whilst the chicken is cooking, prepare the rice and leave to the side once done; (leave covered so it stays warm!)4. Add the second batch of sauce to the pan, along with the prawns and cook for a further 10 – 15 minutes.5. Scoop the cooked rice into a teacup and flip onto the centre of your plate to reveal the mound of rice. Arrange the chicken and prawns around the sides. Garnish the rice with the above listed.
