Ingredients Cauliflower:6 cups cauliflower florets & stalks (bite sized pieces)2 tbsp olive oil1 tsp chilli powder2 tsp ground coriander1/2 tsp ground turmeric1 tsp saltSauce:1 cup onion (finely diced)2 tbsp olive oil5 cloves garlic (minced)2 tsp ginger (grated)2 tsp ground coriander1 tsp ground cumin1 tsp turmeric2 tsp chilli powder2 cups tomatoes (diced)2 tbsp tomato paste2 cups coconut or other plant based milk of choice1/2 tsp garam masala1/2 tsp salt1/4 tsp ground black pepper Steps To roast the cauliflower, place them into a large roasting tray, add all the ingredients, massage well & place in an preheated oven for 30 mins or until golden brown.Meanwhile heat oil in a pan on medium high, add onion & fry until translucent.Add garlic & ginger, fry for 30 secs.Add all the spices, fry for 1 min then add both types of tomatoes.Simmer for 5 mins, add milk & simmer for another 10 mins.Add roasted cauliflower, garam masala, salt & pepper, stir & simmer for 5 mins.Taste to adjust seasoning & serve hot with rice or bread of choice.
