Download ImageWatch Video Apple Pie Soufra Fillo Cake Ingredients375g Antoniou Fillo PastryApprox 1⁄2 cup ghee or unsalted butter, meltedFor The Apples100g unsalted butter4 large Granny Smith apples, peeled,cored, cut into 1cm cubes1⁄2 cup brown sugar1 teaspoon cinnamon1⁄2 teaspoon nutmeg600g Paul’s Vanilla Custard1⁄2 cup walnuts, choppedMethodPreheat your oven to 1800c fan forced. Grease a round baking dish with butter.Lay one sheet of Fillo pastry onto your workspace, with the long side of the Fillo Pastry facing you. Brush with butter. Lay another sheet of Fillo Pastry over.Crinkle the pastry as shown in video and coil the pastry into a spiral, place in your dish.Repeat till all pastry used.Drizzle the remaining butter all over and bake for 20mins or till golden.Remove from oven and set aside.Meanwhile make the apple filling by melting butter in a pan on med heat then add apples, cook stirring occasionally for 5 mins.Now add brown sugar, cinnamon & nutmeg. Stir and cook a further 3 minutes.Drizzle custard over the cooked pastry (I didn’t measure this step it was approx 400ml) reserving the rest for serving.Place the apples on top of the custard and pastry, try not to add too much of the liquid from the apples just a little.Sprinkle with walnuts & bake a further 25-30mins.Serve warm drizzled with more Custard enjoy!
