Download ImageZucchini Basil Soup Ingredients (2-3 Servings)2 medium zucchinis chunked1 onion diced1 garlic clove minceda handful of fresh basil leaves2 cups vegetable brothOlive oilSalt and pepper, dried oregano, paprika(For toppings: lemon wedges, greek yogurt, feta or goat cheese, basil leaves and cracked pepper)StepsHeat around 1 tbsp olive in a big pot on medium heat.Cook the onion and garlic for a few minutes until soft and translucent.Add the zucchini chunks and the broth. Add water if needed just to barely cover the zucchini.Bring to a boil and let simmer covered around 15 minutes or until the zucchini chunks are soft.Season with salt, pepper, dried herbs and add the basil leaves.Blend with an immersion blender or in a food processor.
