Watch Video Ingredients 11⁄2 Cups red lentils, washed1 carrot, grated1 zucchini, grated1 onion, diced1⁄4 cup medium grain rice (do not wash)1 heaped teaspoon vegeta1⁄2 teaspoon cumin1⁄2 teaspoon paprikaSalt & Cracked pepper to tasteTablespoon gheeBoiling water to fill potChilli flakes & chopped parsley to garnish Method In a large pot add ghee and saute your onions for a few minutes till soft.Add all the rest of the ingredients, (season to taste with salt towards the end.)Bring to a boil and you will need to keep an eye on it at the beginning as it will froth up and you will need to skim the top to avoid it overflowing.Once you have removed the froth bring to a medium boil and cook for approx 40-45mins. You may need to add more water during the course of the cooking time.I didnt blend todays soup but you can using a heatproof blender or stick blender to get a smoother soup.
