Download ImageRed Lentil Mjaddara Ingredients1 cup red lentils1/2 cup quinoa (or rice, or bulgur)1 onion diced2 tbsp olive oil separated2 garlic cloves mincedSprinkles of ground cumin, paprikaSalt and pepperFor garnish: greek yogurt, parsley and chivesStepsHeat 1 tbsp olive oil in a pot on medium heat, cook the garlic for 30 seconds until fragrant.Add the quinoa, red lentils and cumin and give them a stir.Add 3 cups of water, salt and pepper.Bring to a boil and let simmer on low heat 15-20 minutes or until the quinoa is cooked.Meanwhile, heat 1 tbsp olive oil in a separate pan and cook the onions until golden.Add paprika and salt and toss to coat completely.Once the lentil mix is done, add the onions and taste to adjust seasoning.Add the toppings and sprinkle more paprika on top and serve warm. Enjoy!Optional: when the lentil mix is done cooking, give it a quick blend with an immersion blender to get a smoother texture.
