Download ImageWatch Video Stuffed Zucchini (Koussa Mihshi) Ingredients12-15 zucchinis (depending on size)1/2 lb ground beef1 cup rice, washed & drained1 onion, diced2 tomatoes, diced5 tbsp tomato paste6 garlic gloves, grated1 tsp 7 spice (or allspice)2 tsp salt divided1 1/2 tsp dried mint1/2 tsp cumin1/2 tsp black pepper9 cups water (or enough to cover zucchinis completely)4-5 potatoes, peeled, cut & washed (optional)MethodWash the zucchinis and cut off the top stalks and slice off the dried tips at the bottom.Using a corer, hollow out the zucchini’s making sure not to poke through them.In a bowl, add the ground beef, rice, tomatoes, onions, spices and 1 tsp salt. Mix well.Stuff the zucchinis with the mixture leaving 1/2” free at the top (filling will expand). Arrange them in a pot with the potatoes & add the water.Bring to a boil on med/high heat and remove foam that forms on top with a spoon. Lower heat to med/low, add tomato paste & 1 tsp salt. Cover with lid half way and let them simmer for 30-35 minutes.Taste the sauce & adjust salt if needed. Add garlic and dried mint. Cook for a few more minutes. Enjoy! Source : www.instagram.com
