Download ImageWhite Bean Chili Ingredients2 cups white beans (freshly boiled or canned)4 cups broth of choice2 tbsp extra virgin olive oil1 cup onion (diced)4 cloves garlic (minced)1 cup leek (thinly sliced)1 tbsp ground cumin1&1/2 tsp ground coriander1/4 cup jalapeno chillies (minced)1 cup green serrano chillies (finely diced)1 cup green bell peppers (finely diced)1 tsp salt (to taste)1/2 tsp ground black pepper (to taste)1 cup corn kernels (fresh or frozen)1 tbsp lime juiceGarnishgreen chillies of choice (sliced)cilantro or parsley (chopped)sour creamtortilla chipslime wedgesStepsBlend 1 cup of beans with 1 cup of broth & set aside.Heat oil to a large pot over medium high, add onion & garlic, sauté till onion turns translucent.Add leek, cook for 2 more mins.Add cumin & coriander, continue to cook, stirring frequently, for 1 min.Add all the chillies & saute for 2 mins.Add remaining broth, puréed beans, salt & pepper, bring to a boil.Reduce heat to low & simmer for 15 mins.Add whole beans, bring back to a simmer & cook until beans reach desired doneness.Add corn & lime juice, taste to adjust seasoning.Ladle chili into bowls & serve with garnish of choice.
