Download ImageStuffed Peppers Ingredients6 bell peppers (I use @pureflavor peppers from Costco)1 lb ground beef1 cup cauliflower rice (or 1 cup cooked rice)1/2 cup tomato sauce1/2 cup water1 onion, diced2 cloves garlic, minced3 tbsp olive oil more for drizzling1 tsp paprika1 tsp cumin1 tsp dried oregano1 tsp salt1/2 tsp black pepper1/2 tsp Italian seasoning1 cup shredded cheeseMethodPreheat oven to 375FCut the top off and remove the insides of your bell peppers and place them in a baking dish. Drizzle with olive oil, sprinkle with salt & pepper and bake for 15 minutes (another option is to boil the peppers for 5 minutes).For the mixture: Heat olive oil, add onions garlic and cook until translucent. Add the ground beef & spices (except oregano) and sauté until meat is browned. Add cauliflower rice, mix well with ground beef and cook for 2 minutes. Add tomato sauce & oregano stirring to incorporate all together.Remove the bell peppers from the oven and divide the mixture between all 6 peppers. Add the top over each pepper. Add 1/2 cup water to the baking dish, cover with foil and bake for 20 minutes.Uncover, add cheese and bake for an additional 10-15 minutes until cheese has melted. Broil to brown the cheese.
