Download ImageSpicy Peanut Noodles IngredientsPeanut Sauce7 tbsp peanut butter (smooth)6 tbsp light soy sauce1 tbsp dark soy sauce4 tbsp chili oil with sediment (store bought or homemade)4 tbsp chilli flakes of choice5 tbsp rice vinegar1 tbsp honey7 tbsp water (hot)Noodles400 g dry wheat noodles or spaghetti1 cup red cabbage (thinly sliced)1 cup carrot (julienned)1 cup red or green bell pepper (julienned)2 tbsp scallion (chopped)2 tbsp peanuts (roughly ground)StepsAdd ingredients for the sauce into a jar, shake well, taste to adjust seasoning & pour equal amounts into 4 serving bowls/plates.Cook noodles according to package instructions (till al dente), drain well & divide equally among the 4 portions.Mix well to coat noodles in the sauce (adding abt 1-2 tbsp of water from cooking the noodles to each portion, to thin the sauce)Arrange cabbage, carrot, bell peppers, dollop of chilli oil (optional), sprinkle scallion & peanuts, serve immediately with lime/lemon wedges (optional) Source : www.instagram.com
