Download ImageWatch Video Roasted Turkey Drumstick Ingredients1 kg turkey drumstick2 medium onions (sliced into thick rounds)1 kg small potatoes4 tbsp butter or olive oil (divided)Brine1/2 lemon (peels only)2 sprigs rosemary2 bay leaves1/2 tsp whole black peppercorns2 tsp salt3 cloves garlic (peeled & smashed)4 cups waterInstructionIn a saucepan, combine 1 cup of water with the rest of the ingredients, warm on low heat to dissolve salt.Pour into a baking tray large enough to submerge turkey completely, add remaining water, gently place the thawed turkey & place in the fridge for 24 hrs.Dry Rub1 tsp salt1/2 tsp ground black pepper1 tsp garlic powder1 tsp dried thyme1 tsp smoked paprika or cayenneStepsRemove turkey from brine, drain & pat dry.Drizzle 2 tbsp of melted butter or olive oil on turkey & rub.Reserve 1 tsp of dry rub, sprinkle the rest on the turkey & massage thoroughly (even under the skin)Preheat oven to 200 deg C.On a large baking tray, brush with butter or oil on the base, arrange onion rings.Drizzle remaining butter or oil on potatoes, add reserved dry rub, toss to coat then arrange them on the sides of tray.Place turkey drumstick in the middle, cover with aluminium foil & bake for 60 mins.Remove foil, spoon oil from base of tray, drizzle over turkey & roast (uncovered) for 20 mins.Flip turkey over, baste with juices again & continue roasting until juices run clear when pierced with a fork or thermometer registers an internal temp of 75 deg C (not touching the bone).Remove from oven, rest for 10 mins before serving.
