Download ImagePuri (Indian Fried Bread) Ingredients2 cups whole wheat flour1&1/2 tsp fine semolina2&1/2 tsp oil (divided)1/2 tsp salt15 tbsp water (or more if needed)StepsAdd flour, semolina, 1&1/2 tsp oil & salt into a large bowl.Add 10 tbsp water, mix with hands till it forms a rough dough.Add remaining water (tablespoon by tablespoon) & continue to knead till a stiff & tight dough is formed (add more water if needed)Add remaining oil & knead lightly to smoothen the dough.Divide dough into 16 portions, form them into smooth balls by rolling them lightly between palms.Keep covered till ready to cook.Brush some oil onto work surface, use a rolling pin to flatten dough ball (starting from the center) to form a round puri that’s about 1/4 cm thick & continue rolling out the rest.Heat enough oil for deep frying in a pot, add puri (one by one), when it rises to the surface, gently press down with a perforated ladle.Once puri puffs up, flip over & fry till the other side turns golden brown too.Transfer puri onto kitchen towels to drain any excess oil & continue frying the rest.Serve puri hot/warm with desired condiments.
