Ingredients 8 chicken thighs2 tsp salt1 tsp ground black pepper1 tbsp olive oil6 cloves garlic (minced)2 cups onion (sliced)1 tsp paprika1 tsp cayenne pepper1 tsp ground cumin1/2 tsp ground coriander1/2 tsp ground ginger1/2 tsp ground cinnamon2 tbsp AP flour3 dried limes or 1 preserved lemon2 cups chicken broth1 tbsp honey2 cups carrots (chopped)1 cup green olives (pitted & halved)2 tbsp cilantro (chopped)1 tbsp lime or lemon juice Steps Season both sides of chicken with salt & pepper, heat oil in a large heavy bottomed pan over medium high heat it begins to smoke.Brown chicken pieces skin side down until deep golden (abt 5 mins), flip over, brown the other side (another 5 mins) & remove.Into the pan used earlier, add onion & garlic, sauté for 8 mins.Add paprika, cumin, cayenne, ginger, cinnamon & flour, stir constantly until fragrant (abt 30 secs)Add dried limes/lemon, chicken broth & honey, stir & scrape bottom of the pan to loosen any browned bits.Add chicken back in, reduce heat to medium low, cover & cook for 10 mins.Add carrots & cook for 10 mins.Add olives, cilantro & lime/lemon juice then taste to adjust seasoning.Remove from heat, garnish with chopped herbs & lime/lemon wedges then serve with bread or couscous.
