Download ImageWatch Video Kolkata Style Chicken Biryani Ingredients500 gm Basmati rice1 inch Cinnamon stick4 Green cardamom4 Cloves1 Star anise1 Jayatri1 tsp Lemon juice500 gram Chicken50 gm yogurt3 Tbsp Ginger garlic paste2 Tbsp Red chilli powder3 tsp Turmeric powder1 tsp Cumin powder1 tsp Coriander powder3 Tbsp biryani masala ( optional)1 Chopped onion1 tsp Garam masala3 boiled Egg3 Boiled Potato1 cup fried Onion birista1/2 cup Ghee/ oilMethodMarinate the chicken with salt, ginger garlic paste, red chilli powder, turmeric powder, curd,cumin powder, coriander powder & oil.Marinate it for at least 5 to 6 hours.Soak rice in water for 15 minutes & then boil it with lemon juice , star anise, cloves,jayatri,green cardamom & cinnamon stick.Heat oil, add salt & turmeric powder & fry boiled eggs & potatoes in it. take out from oil and leave it aside.Add chopped onion & ginger garlic paste.Saute it for a while.Add remaining spices.Add marinated chicken & mix it well with spices. Cook on low heat until chicken is tender. Add water if needed. When the chicken is tender and water is evaporated. It’s ready.Now assembling time.Take a heavy bottomed panSpread one layer of half cooked rice on it and next layer is chicken.Place boiled, fried eggs & potatoes,onion birista.Cover this layer with rice again.Sprinkle suffron mix milk.Cover with lid & seal it with flour dough.Cook it in low flame for at least 20 minutes.After that switch off the flame & keep rest for another 15 minutes.Mix before serving.Its ready now.Serve it with salad & raita.
