Japanese Fried Rice (Yakimeshi)

Japanese Fried Rice (Yakimeshi) Ingredients

1 tbsp vegetable oil5 cloves garlic (minced)1 cup onion (finely diced)1/2 cup carrot (finely diced)1/2 cup bell peppers (finely diced)1 cup cabbage (finely chopped)1/2 cup peas (fresh or frozen)3 cups old cooked Japanese rice (chilled for at least 1 day)3 large eggs (whisked)2 tbsp soy sauce1/2 tsp salt (to taste)1/2 tsp ground white pepper (to taste)scallions (chopped, for garnish)shichimi togarashi (for garnish)

Steps

In a wok or large pan over high heat, add oil & garlic, cook for 30 secsAdd onions & carrot, cook for 1-2 mins, or until vegetables are soft but still crunchyAdd bell peppers, cabbage & peas, stir for 1-2 minsAdd rice & stir until the ingredients are mixed in with the ricePush rice to one side & add eggs, continuously stirring & scrambling eggs with the spatula until they’re almost fully cookedMix eggs with the rice & add soy sauceSeason with salt & pepper, stir for 1 min then taste to adjust seasoningTurn off the heat, transfer into large or individual serving plates/bowls, garnish (optional) & enjoy!
