Festive Feta And Watermelon Salad Ingredients

1 – 8 oz block of good feta cheeseSmall watermelon2 – 8 oz boxes of Blueberries3 Tbs fresh lemon juiceLemon zest from 2 lemons2 Tbs honey2 Tbs cold waterFresh mint for garnish

Directions

1. Cut the feta into slices and then into 1 by 1 inch squares2. Slice the watermelon into 1 inch slices, then into 1 by 1 inch squares3. Mix the honey, lemon and water together4. Place the feta and watermelon squares in an alternating pattern on serving platter. Surround with blueberries.5. Sprinkle lemon zest on top.6. Drizzle dressing over the cheese and watermelon. Refrigerate until ready to serve.
