Download ImageEtsiz Kuru Fasulye (Meatless Turkish White Bean Stew) Ingredients2 tbsp olive oil2 tbsp butter1 cup onion (finely diced)2 cloves garlic (minced)2 tbsp tomato paste1 tsp paprika1/2 tsp chilli flakes1 cup dry white beans (soaked overnight, boiled for 2 hrs till tender but doesn’t fall apart too easily)4 cups water1 tsp salt (to taste)1/2 tsp ground black pepper (to taste)StepsAdd olive oil & butter to a pot on medium high heat.Add onion & garlic, sauté till onion turns translucent. Add tomato paste & stir for 1 min.Add paprika & chilli flakes, stir for 1 min.Add beans & water, bring to a boil.Lower heat to medium low, add salt & pepper, simmer for 30 mins.Taste to adjust seasoning & continue cooking till beans reach desired texture & gravy reaches desired consistency.Garnish with chopped parsley & lemon wedges, serve with bread, bulgur or rice.
