( do not add the breadcrumbs yet)In a separate bowl/plate add the breadcrumbs and cover the aubergine until evenly coatedHeat the oil in a frying pan until hotTurn the heat down to lowAdd the aubergine and fry 3 minutes on each side until golden brown and crispyOnce satisfied remove the aubergine from the oil and leave on a paper towel to soak the oil.Serve whist hot with dipping sauce of your choiceVoila!
