Creamy Chipotle Salmon

Chipotle seasoning is a blend of dried and ground spices that is commonly used in Mexican and Tex-Mex cuisine. It is typically made with smoked and dried jalapeno peppers, which are known as chipotle peppers, as well as other spices such as cumin, garlic powder, and chili powder.

Ingredients

For the Salmon:4 salmon fillets, skin ona pinch of salta pinch of pepper1 tsp of paprika1 tsp of chipotle seasoning1 tsp of parsley1 tbsp of oil

For The Sauce

50g of light butter4 garlic cloves, grated1/2 onion, diced150g of spinach, washed and drained1 tbsp of tomato puree350ml of double cream1 tsp of paprika2 tsp of chipotle seasoning1/4 cup of water (if needed)

Instructions

1. Season both sides of the salmon with all the spices (bar the oil). Heat up the oil in a non stick pan and place salmon skin side down. On medium heat, crisp up the salmon skin then turn over. Roughly 4-5 minutes on each side. Once cooked, set aside.2. In the same pan, melt the butter and add in the garlic and onions. Sprinkle over some salt and saute till soft.3. Stir in your tomato puree and allow to cook for a few minutes.4. Add in the paprika and chipotle seasoning. Stir and cook for a few minutes.5. Add in the spinach and allow to wilt.6. Add the cream, and bring to a little bubble.7. Add the salmon back in and coat gently in the sauce.8. Serve with mash!
