Cherry Chocolate Parfaits

Ingredients

Chocolate cake (cut into cubes)2 cups Cherry sauce2 cups Whipped cream1 cup chocolate whipped ganache

Cherry Sauce

400g Cherries pitted (halved)1⁄3 cup sugar (add more if you like sweeter)1⁄4 cup waterJuice of 1 medium fresh lemon11⁄2 tablespoons corn flour dessolved in 3 tablespoons water

Instructions

Add the pitted halved cherries, sugar, water, and lemon juice in a pot/pan.Cook on medium heat stirring occasionally until the cherries soften and the sugar is completely dessolved.Add in the corn flour slurry while stirring constantly. The sauce will thicken.Remove from heat, cool completely before using or storing away.Store in a sterilised glass jar.

Layer whipped creamChocolate cakeWhipped creamCherry sauceChocolate ganacheRepeat layers end with whipped cream and decorate as desired.

Note

For the whipped chocolate ganache: melt 50g chocolate or more as required in a microwave safe bowl at 30 second intervals.Add 1 cup whipped cream to the melted chocolate, whisk until well incorporated. Use as desired.
