In a separate bowl, beat together with a mixer the butter and sugars until smooth.Add the egg and vanilla and mix at low speed. Gradually add in the flour and mix just until everything is combined.Do not over mix. Stir in the chocolate chips. Chill the dough at least 1 hour in the fridge.Once chilled, scoop the dough with a heaping tbsp or a measuring cup, forming a ball with your hands.Place them on a baking sheet and do not flatten them.Bake in a preheated oven on 180 degrees for 10 minutes (more or less depending on the size of the cookies and the oven) or just until the edges and bottoms are browned.
