Download ImageCheesy Mushroom Rigatoni Ingredients500 g rigatoni (or penne/ziti)5 tbsp butter (divided)2 cups fresh mushrooms of choice (sliced)5 cloves garlic (finely sliced)1/2 tsp salt (to taste)1/4 tsp freshly ground black pepper (to taste)1/2 cup heavy or cooking cream2 cups melty cheese of choice (freshly grated)parsley (chopped, optional)Steps To MakeBoil pasta till al dente, according to package instructions (reserve 1 cup of starchy water), drain & set aside.In a large pan, melt 2 tbsp of butter over medium heat.When hot, add mushrooms & garlic, stir, add salt & pepper, cook for 10 mins or until they are deep brown in colour & transfer to a bowl or plate.Using the same pan, melt remaining butter, add cream & 3/4 of the shredded cheese, stir until cheese is melted.Add 1/2 of the pasta water to thin the sauce.Add cooked mushrooms & pasta back into the pan, stir to coat them evenly in the sauce & taste to adjust seasoning.Garnish with remaining cheese & chopped parsley, serve immediately.
