Download ImageSpinach, Mushroom &Amp; Caramelised Onion Pasta Ingredients500 g dried pasta of choice (boiled in salted water until al dente, according to packaging instructions & 1 cup of cooking water reserved)2 tbsp olive oil2 large onions (thinly sliced)2 cups fresh mushrooms of choice (sliced)5 cloves garlic (minced)3 tbsp sundried tomatoes (soaked in warm water, squeezed & finely chopped)1 tsp dried thyme1 tsp salt (to taste)1/2 tsp ground black pepper (to taste)5 cups spinach (tightly packed)StepsHeat oil in a large pan on medium low.Add onion, stir occasionally until translucent (abt 15 mins)Add mushroom & garlic, cook until mushrooms have browned & most of the moisture has been reabsorbed (abt 8 mins)Increase heat to medium high, add tomatoes, thyme, salt & pepper, stir & cook for 2 more mins.Add spinach, stir & cook until they wilt (abt 2 mins).Add pasta, half of reserved water (more if needed), mix well, taste to adjust seasoning & remove from heat.Ladle into individual plates/bowls, top with freshly grated parmesan & serve.
