Kussa, also known as kousa, is a Middle Eastern dish that typically features stuffed zucchini or squash. The zucchini is hollowed out and stuffed with a mixture of ground meat, rice, onions, tomatoes, and spices such as cinnamon, allspice, and mint. The stuffed zucchini is then simmered in a tomato-based sauce until tender.

Ingredients

1 1/2 kilo zucchini chopped into halves2 onions finely chopped1/2 kilo mince meat3-4 tbsp tomato pasteSaltBlack PepperDry mintSeven spices11/2 litre water you might add more depends how you like it.

Instructions

In a pot cook mince meat until changes color.Once done add the onions and cook until soften and meat is fully cooked.Add salt, pepper, mint and seven spices to the meat and mix well. Add tomato paste and water than add the zucchini.At this stage you can taste it and adjust spices, salt and water to your liking.Let it boil and let it simmer on a low meduim heat for 30 minutes or until sauce is thicken and zucchini is cooked.Serve with rice.
