Download ImageBaked Husselback Potatoes Ingredients* 4 medium potatoes* 4 tablespoons extra virgin olive oil* Mozzarella slices* Black pepper* sea saltMethod* Cut thin vertical slices in potatoes. Keeping the back attached.* Place mozzarella cheese in between the cuts* Brush them with olive oil and sprinkle salt and pepper.* Place in the oven and bake for 20 minutes on high heat.* Remove from the oven and brush all over with the olive oil mixture, separating the slices slightly with a knife to get some of the mixture between the slices.* Put them back in the oven for 20 minutes with only top burner on.White Sauce Ingredients* 2 tbsp Butter* 2 tbsp olive oil* 1 Onion small – chopped* 1 tsp Minced Garlic* 1/2 cup full cream milk.* 1/2 cup cream cheese* 1/2 cups Chicken broth or vegetables stock* 4 tbsp All-purpose flour* Dry parsley* Freshly ground black pepper* Salt – to tasteMethod* In pan, heat the butter and olive oil until melted.* Cook the onion, Minced Garlic and salt in the butter until tender.* Sprinkle the flour on the butter and onion and Whisk until smooth.* Let the butter and flour mixture cook for 1-2 minute over medium heat.* Add chicken broth and milk.* Add cream cheese and whisk* When the consistency of your sauce becomes thick and creamy, remove from the heat and season with salt, black pepper and dry parsley.Pour on baked potato and serve!
