Air-fryed Crispy Parmesan Eggplant

Air-fryed Crispy Parmesan Eggplant Ingredients (Serves 4)

2 large eggplants1/2 cup seasoned breadcrumbs4 tbps grated parmesan cheese1 tsp Italian seasoning1/4 tsp garlic powder1/2 tsp salt1/4 tsp pepper2 eggs1/4 cup flourCooking spray

Instructions

Slice the eggplant into ¼ inch round slices. Sprinkle with salt.In a shallow bowl, beat 2 eggs, 2 tbsp water & sprinkle w salt n pepper.•in another plate combine the bread crumbs, Italian seasoning & garlic powder. Add the flour in another plate.•Dip the eggplant slice in the flour, then it into the egg & then into the breadcrumbs.•Spray the eggplant with oil & then place them in the airfryer at 180⁰C & air fry for 12-15 mins or until golden crispy flipping halfway through. Work in batches.•Make an eggplant macro bowl or serve it as a side. Enjoy!
