Download ImageVeggie Frittata Ingredients10 eggsAround 2 cups chopped veggies (red & yellow bell pepper, zucchini, carrots, asparagus, onion, cherry tomatoes.. or any other veggie you like)1/4 cup greek yogurt1/2 cup shredded mozzarella1 tbsp chopped fresh herbs (I used rosemary and thyme)1/4 tsp each dried oregano, paprika, onion powder, garlic powder1/2 tsp each salt & pepperFeta cheese for garnishStepsStart by chopping all your veggies of choice. In a separate bowl, whisk eggs, greek yogurt, cheese, herbs and seasoning until everything is combined.Butter a baking dish or individual gratin dishes and spoon the chopped veggies in each so they form one layer.Using a ladle, pour some of the egg mix over the veggies in each gratin dish (or just pour them in the big baking dish if using).Top them with chopped asparagus and sprinkle some more cheese. Bake in a preheated oven on 200C for 20-25 min or until the eggs are fully cooked.You will notice the eggs will rise, but they will go back down a few minutes after you remove from the heat.
