Download ImageIngredients250 g dried pasta of choice (boiled till a few mins short of al dente, rinsed with cold water & drained)1 cup reserved pasta water2 tbsp oil1 large onion (finely diced)3 cloves garlic (finely minced)1 inch ginger (finely minced)200 g protein of choice (I used minced beef)4 tbsp sambal of choice (or gochujang)2 tbsp tomato ketchup1 tbsp oyster sauce2 tbsp sweet soy sauce (kicap manis)4 cups mixed vegetables (I used cabbage, celery, carrot, bell peppers & bean sprouts)1/2 tsp salt (to taste)1/2 tsp ground white pepper (to taste)Suggested Garnishomelette (sliced into ribbons)red chillies (sliced)spring onion (chopped)lime wedgesStepsAdd oil into a large pot or wok over medium high heat.Once hot, add onion, garlic & ginger, fry until onion starts to turn translucent.Add protein of choice & cook for 2 mins.Add sambal, tomato ketchup, oyster & soy sauce, stir occasionally & fry until protein is cooked.Add vegetables in order of cooking time needed (I added everything except for bean sprouts) & stir well.Add pasta & 1/2 cup of reserved pasta water, stir well.Add leafy greens or bean sprouts, stir, taste to adjust seasoning, add more pasta water (if desired) & remove from heat.Ladle pasta onto serving plates, garnish (optional) & enjoy.
