Add onions and cook until translucent.Add garlic, peppers & spices. Mix well and cook until vegetables have softened (about 5 minutes).Add the diced tomatoes and tomato sauce. Cover and let simmer on medium heat for 10-15 minutes.Once the mixture has thickened, use a wooden spoon to make six wells. Gently crack an egg into each one.Reduce the heat, cover and cook on low until the egg whites are set.Add crushed red pepper flakes and parsley to garnish. Enjoy with pita bread!
