Panzanella Salad

Salad Ingredients (3-4 Servings)

400g of vine-ripened tomatoesHalf an english cucumber1/4 red onion125g fresh mozzarella di bufala (1 pack)Handful of basil leaves1/4 loaf of bread

Vinaigrette Dressing

1/4 cup olive oil2 tbsp Red wine vinegar1 garlic clove gratedSalt & pepper to taste

Steps

Start by cutting the bread in cubes. Toss with 1-2 tbsp of olive oil and a pinch of sea salt.Bake in a preheated oven on 200 degrees for 6-7 minutes (it should be golden but still a bit soft on the inside).Let cool before adding it to the salad.Meanwhile, chop the veggies and layer them on a salad plate. Top with hand-torn mozzarella and the crispy bread cubes.Mix the dressing ingredients and pour over the salad. Enjoy fresh!

Tips For A Delicious Salad

Use stale bread for the best taste. If not available, use bread with a thick crust and not too soft on the inside.You can use apple cider vinegar instead of red wine vinegar.Change up the salad by adding feta cheese instead of mozzarella.
