Download ImageMum’s Masala Chicken Ingredients– 1kg Chicken Drumsticks– 1kg Chicken Thighs– 3 tbsp vegetable oil– 2 1/2 very heaped refrigerated masala mix (tumeric, salt, garlic, ginger and fresh green chillies)– 2 1/2 tbsp natural yoghurt– 1 rounded tsp (hot) chilli powder– 1 heaped tsp dhana jeeru powder– 1 heaped tsp chilli powder– 1 rounded tsp tumeric– 1 1/2 tsp garam masala– 1 1/2 tsp salt– 2 tbsp lemon juice– Coriander for garnishSteps1 Remove the outer skin from the drumsticks and thighs making small slits as you go along Cut thighs in half and let the excess water drain off the chicken2 Mix together the remaining ingredients to make the marinade and mix well with the chicken (Best to leave in the fridge overnight)3 The marinated chicken can be cooked on a BBQ, in the oven or in a pan (as above) If pan frying, drop a few tbsp of oil into a large pan and once it’s hot, cook the chicken for about 45-50 mins flipping each piece over about halfway through4 Garnish with chopped coriander and lemon wedges and serve immediately Source : www.instagram.com
