Download ImageWatch Video Dry Ingredients– 1 cup whole wheat flour– 1/2 cup ap flour– 1 tsp baking powder– 1 tsp baking sodaWet Ingredients– 90 ml coconut oil– 10ml water– 1 cup mango chunks (mash it and leave some to put in between the layers)– 120g sugar (i used combi of coconut, granulated, n xylitol sugar)– 2 large eggsMango Glaze– 80ml water– 1/2 cup mango– 1/2 tsp corn starch– sweetener (i didnt use cuz my mango was v sweet)Ways– preheat oven to 180C– mix all dry and wet ingredients seperately– add dry into wet– pour the batter to a loaf pan, add the leftover mango chunks– bake for 50 mins– blend water, mango, and sweetener– pour the mango juice to a pan, cook over low heat, add the corn starch and keep stirring– turn off the stove when the juice thickens to a glaze texture, spread the glaze on the top of the cake– enjoy Source : www.instagram.com
