Download ImageChia Pudding With Mango Coulis IngredientsChia Pudding (makes 2 servings)In a bowl, add:1 cup your choice of milk (I used almonds)2 tbsp honey (or maple syrup)1/2 tsp vanilla essence1/4 cup chia seeds**Ways->>**Mix well and chill for minimum 3 hours or overnight.Mango Coulis (makes 1 1/2 jar)400g mango cubed (fresh or frozen)Juice of 1 lime1 tbsp sugarStepsAdd all the ingredients in a small pot and mix.Cook on medium low heat, stirring often, for around 10 minutes or until the mangoes get very soft and start to fall apart.Set aside and let cool 5 min.Blend with a hand blender or in a food processor till you get a smooth thick sauce.If too thick, add 1 tbsp water at a time. Taste and adjust lime juice or sugar as desired.Place in a jar and cool in the fridge.In serving cups, layer the chia seeds and mango coulis and top with fruits of choice (I used kiwis and mangoes) Serve right away and enjoy!
